Roast Chicken Dinner
I cooked roast chicken legs last night, with crispy roast potatoes and carrots and sweet corn... was a nice mid-week treat :o)
I marinated the chicken legs the night before and left them in the fridge. The marinade was made of olive oil, sunflower oil, salt, pepper, mixed herbs, basil, chilli, honey and plain yoghurt... great combination :o)
Then pop into the oven and cook for 1 hour and 15 minutes!
tonite's roast chicken dinner
a couple of chicken thighs and drumsticks (bits of unsalted butter slotted between the skin) .. some cut and peeled red-skinned potatoes and half a butternut squash ... generous sprinkling of dried herbs (rosemary and bay leaves), sea salt and black pepper ... lashings of good quality olive oil .... add into preheated oven of 200C to 220C and roast for about an hour or so ... and dinner is ready!
